Soft & chewy chocolate chip cookies - Keto friendly, gluten free, high in protein and high in fibre 

Ingredients:

1 + 1/3 cup lupin flour 

3/4 cup melted unsalted butter 

1/2 cup powdered monk fruit sugar (or your choice of sugar free substitute)

1/4 cup sugar free milk or dark chocolate chips

2 tsp molasses 

1 large egg yolk

1 tsp vanilla essence 

1 tsp baking soda 

Recipe:

Take 3/4 cup melted unsalted butter. Add 2 tsp molasses, 1 large egg yolk, 1 tsp vanilla essence, 1/2 cup powdered monk fruit sugar (or your choice of sugar free substitute).

In another cup, take 1 + 1/3 cups of lupin flour. Add 1 tsp baking soda and pinch of salt. Mix well. 

Combine butter sugar mixture with lupin flour. Add 1/4 cup sugar free milk or dark chocolate chips. Mix everything well and chill the cookie dough in the refrigerator for 2 hours. 

Make 12 equal parts of the cookie dough & flatten in desired shape. Bake the cookies at 325 degrees F for 11-12 minutes then turn off the oven and leave the cookies inside for 5 more minutes. 

Take the cookies out on a rack, let them cool down and then serve.
