Lupin fritters (Paruppu / masala vadai) - Keto friendly, gluten free, high in protein and high in fibre and vegan

Ingredients:

1/3 cup dry lupin splits

1 small chopped onion

8-10 chopped curry leaves

1/4 cup chopped cilantro

1 tblsp ginger & garlic paste

3 to 5 tblsp Lupin flour

1 chopped thai chilli

1 dry Red chilli

1/2 tsp cumin seeds

1/2 tsp fennel seeds

Salt to taste

Recipe:

Soak 1/3 cup dry lupin splits for a few hours. Keep 2 tblsp soaked lupin splits aside & crush rest of them into a paste with just a few spoons of water. Crush 1/2 tsp cumin seeds, 1/2 tsp fennel seeds and 1 dry red chilli into a powder. In a large bowl, add lupin paste, 2 tblsp soaked whole lupin splits and powdered spice mix. Add chopped onions, curry leaves, cilantro, thai chilli, ginger & garlic paste, lupin flour (depends on the amount of water added earlier in the recipe) and salt to taste. Combine everything well. Make 8 equal round patties. Fry them above 360 degrees F till they are golden brown.

 

Health & nutrition:

This recipe makes 8 lupin fritters and contains whopping 32 g plant based protein in total. As lupin splits are very high in protein as well as fibre, It is a great snack for weight watchers to keep you full for longer period. It is also keto friendly due to lupin splits’ low net carbohydrate content.
