Ingredients:
1/2 cup lupin chunks
2 cups fresh curly parsley
1/4 cup chopped green onions
1/4 cup chopped mint leaves
1/4 cup chopped tomatoes
2 tblsp lemon juice
2 tblsp olive oil
Salt to taste
Recipe:
Soak 1/2 cup lupin chunks for 4-5 hours.
Once soaked, boil and strain the lupin chunks in a large bowl.
Add 2 cups of very finely chopped curly parsley, 1/4 cup chopped green onions, 1/4 cup chopped mint leaves and 1/4 cup chopped tomatoes.
Mix well. Finally, add 2 tblsp lemon juice, 2 tblsp olive oil and salt to taste.
